Cooking the One Burner Way by Gray & Tilton … this is a "gourmet" backcountry book and focuses a lot on baking in the backcountry or at home to take into the backcountry. There are dinner recipes and a plethora of food-planing ideas & guidelines. A fun read-but not the lightest approach.

"The Hungry Hiker's Book of Good Cooking" by McHugh. This book has many good ideas, but the author is willing to do long-cook meals and massive preparation at home.
