Cream of mushroom soup
THis soup although can be bought in the market...but it taste nicer..if homemade :)
INgredients
1/2 stick unsalted butter
1/2 cup finely chopped onion
1/2 pound finely chopped mushrooms
1 tablespoon flour
2 cups chicken broth
1 teaspoon dried thyme
3/4 cup cream or milk
1 teaspoon salt or to taste
1/2 teaspoon pepper
Instructions
1. In a  large saucepan over low heat, melt  the butter, add  the onion and mushrooms.  Cook for 15 mins, stirring occasionally.  Sprinkle with the flour and cook for 2 to 3 mins longer, stirring occasionally.
2. Add the chicken broth, stirring constantly.  Raise heat to medium and allo liquid to come to boil.  Reduce heat, add  the thyme  and simmer  for 20 mins.  Stir in the cream.  Add salt and pepper. Heat throughout, but do not boil...
