Matzo Balls (Streits)
1 cup matzah meal (Streits best but any will do; may need more depending on texture desired)
4 eggs
1/3 cup kosher l'pesach oil
1/2 cup water
1 teaspoon salt
dash of papper

mix all ingredients
chill in refridgerator for one hour
roll into balls and boil (water or soup)for 20 minutes


Matzah Meal Pancakes
3 eggs
1 cup matzah meal
salt and pepper (this is passover, you don't need amounts)
Kosher l'pesach oil

1. Separate eggs and keep yolks
2. Beat egg whites until stiff, about 3-5 minutes
3. fold in matzoh meal to egg whites
4. If you want fritters, fry at this point
5. If you want the classic MM Pancakes, add yolks to mixture, then fry
