Chicken Kiev

1/4 lb. margarine at room temperature

Add: 1/2 teaspoon salt

dash pepper

tablespoon chopped parsley

1/2 teaspoon tarragon

1 clove crushed garlic

 

Mix together and make into coils (about 20)

Put into freezer  overnight

 

Roll into chicken cutlet, dip into flour and egg and bread crumbs and bake (uncovered) in oven at 350 for 45 minutes -- baste

 

Rice Pilaf

(To make for 6, double recipe)

1 dash thyme

1 stick margarine

1 large onion sliced thin in rounds

1/4 cut diced green pepper

6 ounce can mushrooms sliced

1 cup Uncle Ben's conv. rice

2 cups of boiled water

2 chicken bouillon cubes

 

Melt 1/2 stick margarine in pan and brown onions over medium heat. Add mushrooms and green peppers and cook until tender. Remove all vegetables and place in casserole. Same skillet heat remaining margarine and add rice and brown over low heat stirring constantly. Remove from heat and add to casserole with vegetables. Add two cups of boiling water and 2 chicken cubes (dissolve together before placing in casserole) and bake for 45 minutes in 350 oven, covered.
