RABBIT ALMONDINE INGREDIENTS
Yield: 4 servings
1 Rabbit cut in pieces
� cups Liquid oil
1/3 cups Flour
1� teaspoon Salt
1 teaspoon Pepper
� cups Water
1 Medium onion cut into rings
� cups Toasted slivered almonds
1 cups Chicken broth
� teaspoon Rosemary
1 teaspoon Lemon rind
� cups Sour cream
Coat rabbit pieces with flour (reserve remaining flour). Brown in heavy hot skillet, sprinkle with salt and pepper. Pour chicken broth with rosemary, lemon rind and onion over rabbit. Simmer 45 minutes. Remove rabbit pieces to warmed platter. Combine reserved flour with water and stir into broth until sauce is thick. Stir in sour cream and almonds, pour over rabbit.

IRISH LAMBPOT INGREDIENTS:
Yield: 4 Servings
2 sm Onions, cut into rings
3 md Carrots,cubed
2 Turnips,cubed
2 Celery Stalks,cut in rings
1 Cabbage,small,cut up
29 oz Lamb Shoulder,cut into 3 cm
Big pieces
Salt
Pepper
2 Cloves Garlic,pressed
4 sm Potatoes, cubed
� tablespoon Majoram,chopped
1.Put lamb into pot and cover with water.Season with salt and pepper and cover and simmer 20 minutes. 2.Add the vegetables, garlic and potatoes and simmer another 25-30 minutes covered. 3.Season with Watertown NY 315-786-1120

MOOSE STEAK INGREDIENTS:
Yield: 4 servings
� cups Onions, chopped fine
2 tablespoon Butter
2 lb Moose Steak
1 cups Chopped Mushrooms
� cups Sweet or Sour Cream
2 tablespoon Flour
Fry onion, brown in butter. Sear steak on both sides in butter with onion. Cover and let simmer for � hour.
When meat is almost tender, add mushrooms and the flour stirred into the cream. Cover and let simmer 20 minutes.
Your Moose Steak is ready. Happy cooking!

BARBECUED SPARERIBS
Yield: 4 servings
4 lb Spareribs (any meat)
1 teaspoon Lemon juice
1 Bottle Heinz Chili Sauce
1/3 cups Worcestershire Sauce
1/3 cups Dry minced onion or
1 teaspoon Chili powder
2 ds Tabasco Sauce
2 cups Water
Place ribs in shallow roasting pan, meaty side up. Roast in very hot oven (450 degrees) for 30 minutes.
Combine remaining ingredients in large measuring cup or bowl and pour over ribs. Continue baking at 350 degrees until tender, about 1 hour. Baste ribs every 10-15 minutes. If sauce get to thick, add more water.

THREE-PEPPER BEEF
Yield: 4 servings
1 lb Boneless beef sirloin steak
2 tablespoon Vegetable oil
1 tablespoon Each, lemon juice and water
2 teaspoon Dijon style mustard
1 teaspoon Honey
� teaspoon Dried oregano leaves
� teaspoon Black pepper
1 Medium green, red OR yellow
8 Large mushrooms
Cut beef steak into 1" pieces. Whisk together oil, lemon juice, water, mustard, honey, oregano and black pepper in a large bowl. Add beef, bell pepper and mushrooms, stirring to coat. Alternately thread beef, bell peppers and mushrooms on skewers. Place ka-bobs in broiler pan so surface of meat is 3-4" from heat. (or outdoor grill) Broil/cook 9-12 minutes for rare to medium, turning occassionally.
