Broiled Fresh Whole Fish

Ingredients
Whole Fresh Fish, or fillets
butter 
garlic
season salt
pepper
lemon juice or Accent
Dill
Foil

Cooking Instructions
The key to fresh fish, is FRESH! Fresh fish does NOT smell bad. It has firm muscle tone and even color.

Place fish on a sheet of foil. Add rest of ingredients to taste, and seal in foil. Broil on 350-400*F oven for 8 minutes. Open foil and flip the fish over once. Reseal in foil and broil for 6 more minutes.

Alternate: Without foil, microwave at power level 7 for 4 minutes, flip, cook at power level 7 for 3 more minutes.

Chicken Casserole

Ingredients
2 C Wide Egg Noodles, cooked 
1-2 C shredded Chicken, cooked*
1 Med Onion, diced
1 Med Bell Pepper, chopped
1 can Black Olives, halved
1 can Creamed Corn
1/2 C Milk
1/2 C Mozzarella, shredded
1/2 C Swiss, shredded
1/2 C Cheddar, shredded
to taste: Salt, Pepper, Garlic

Cooking Instructions
Combine in a 13x9x2 inch glass casserole dish and bake for 20-30 minutes at 350*F Dish is done when onions are transparent and cheese is bubbling.

*NOTE: canned flaked chicken may be used.

Chicken Salad

Ingredients
2 C Chicken, diced baked
3 C Rice, cooked
8 oz Black Olives, halved
2 Tbsp sweet Pickle Relish
12 oz Kidney Beans, rinsed
1 medium Onion, diced
2 Tbsp Mayonnaise 
Garlic, Salt, Pepper to taste

Cooking Instructions
Combine and chill.

Egg Rolls

Ingredients:
Peanut oil (or sesame)
2 lbs ground turkey
1 lb cole slaw salad mix (cabbage and carrots)
1 lg can chopped mushrooms
1 pkg bean sprouts, rinsed
2 pkgs egg roll wraps
1 lg onion, minced
soy sauce, garlic, salt, pepper to taste
1/2 tsp Accent 

Cooking Instructions:
Combine cole slaw mix and bean sprouts. Blanch and drain thoroughly. Cook turkey and spices, including Accent , grind in food processor. Combine ingredients. Stir-fry until bean sprouts and onions are clear. Spoon 1-1 1/2 Tbsp of mix into each egg roll wrap. Fold sides in and wrap around to form egg roll. Drop into 350-400*F peanut or sesame oil. Fry for about 4 minutes, or until golden brown.
Makes about 40 egg rolls. They freeze well

Enchiladas

Ingredients
2 Cups ground beef or chicken
1 medium onion, diced
1 can Old El Paso red or green Enchilada sauce
10-12 corn tortillas
1 small can diced green chilies
salt, pepper, garlic to taste
oil
grated cheese
lettuce, shredded
fresh tomato, diced

Cooking Instructions
In a skillet, combine meat, onion, green chilies and spices. In a separate skillet, heat oil and precook corn tortillas. In a third skillet, heat Enchilada sauce. Dip tortillas in sauce. Place tortilla in casserole dish. Place spoonful of meat and cheese in each tortilla and roll closed. Repeat for each enchilada. Cover with cheese and remaining Enchilada sauce. Bake in 350*F oven for 30 minutes or until cheese is melted and sauce is bubbly.

Green Chili Burritos

Ingredients
FILLING:
1 1/2 lbs ground Beef
1 Med onion, sliced
1 small can green Chilies, diced
To Taste: garlic, salt, pepper, Worcestershire sauce
flour tortillas
Cheese, grated

Cooking Instructions 
Combine Filling ingredients in a skillet and simmer until onions are clear. Prepare Tortillas as instructions in package. Fill tortillas with filling and top with cheese, then roll.

Healthy Fried Chicken

Ingredients
12 chicken thighs, or breasts, cleaned, deboned, skinned 
Season salt
garlic powder
Canola oil

Cooking Instructions
In a skillet, heat oil. Sprinkle chicken with spices and fry for about 4 minutes on medium heat. Turn and sprinkle other side with spices. Fry for 4 more minutes. Turn chicken and cook for three more minutes, turn again and cook for 3 more minutes. Remove and place on paper towel to absorb excess oil.

Homemade Chicken Soup

Ingredients
2 cups chicken, bite-size, cooked
2 Cups Noodles or Pasta, cooked, rinsed
5 carrots, cut into bite-size
1 Large onion, wedged
season salt
6 chicken bullion cubes or 2 cans consomme (broth)
salt
pepper
garlic
basil
water, to top

Cooking Instructions
***Easy bullion tip: place cubes, still wrapped, in sandwich bag. Whack with rolling pin until powdered***

Combine ingredients in a 5 qt (Dutch oven) pan. Heat on medium heat setting for 2 hours, until onions are clear and carrots are soft.

Optional: cut celery sticks and add.
May use canned chicken, instead of fresh baked chicken, to save time.

Homemade Vegetable Soup 

Ingredients
1 1/2 lb Stew Meat
15 oz Tomato sauce
potatoes
carrots
onions
cooked pasta, rinsed
Any other canned or frozen vegies you want to add
water
to taste: salt, pepper, garlic, basil, Worcestershire sauce, bay leaves(1-3)

Cooking Instructions
Cut vegetables into bite size chunks. Combine all ingredients in a Dutch oven, filling with water to desired consistency. Simmer for 45 minutes to two hours. The longer it simmers, the more flavor. Soup is done when onions are transparent and carrots are soft. Take out Bay leaves before serving.

Javanese Curried Noodles

Ingredients
3 2/3 Tsp vegetable oil
2 1/2 Cups egg noodles
1/2 cup catsup
2 Tbsp soy sauce
1/4 Tsp pepper
1/4 Cup water
2-3 Tsp Curry powder
1 lb beef strips or chunks (may use chicken)
garlic 
1 Tbsp Worcestershire Sauce
1 med onion, diced
Optional: 1 Cup bean sprouts, cleaned, dried 

Cooking Instructions
Cook noodles. Drain. Add 1 Tsp vegetable oil In a separate bowl, combine curry, catsup, soy sauce, pepper, and water. In a warm wok, over low heat, cook meat and Worcestershire sauce. Add remaining ingredients, including noodles, adding spices last. Stir fry until onions are clear. If using bean sprouts, add bean sprouts after meat is cooked, and steam for 3 more minutes.

Lasagna

Ingredients:
Sauce:
1 lb ground beef, lean
1/2 lb pork sausage
1/2 lb Italian Sausage
1 large onion, yellow or white
1 Tbsp Worcestershire sauce
1 tsp parsley
1 tsp oregano
1 tsp rosemary
1 tsp thyme
salt, pepper, garlic...to taste
1 or 2 bay leaves
4 oz can tomato paste
15 oz can of tomato sauce

Cheese filling:
1 lb cottage cheese
1 1/2 -2 lb mozzarella
1/2 lb Romano
2 beaten eggs

Lasagna Noodles, cooked

Cooking Instructions
Combine uncooked cheeses in a separate bowl and set aside. Combine and simmer sauce ingredients until slightly underdone. Layer 1/3 of noodles on bottom of 13X9X2 inch casserole dish or baking pan. Layer 1/3 of sauce, then 1/3 cheese. Repeat for second and third layers. Cover with foil or glass lid. Bake at 350*F for 1 1/2 hours or at 450*F for 45 minutes Remove cover for last 20 minutes

Meat Loaf

Ingredients
2 lbs ground Beef
1 lb. Sausage
2 eggs
1 onion, diced
1 teaspoon Sage
1 can Tomatoes
Crackers, crushed
1/2 Tablespoon Chili
Powder
Salt, pepper, Garlic Powder, Worcestershire sauce to taste

Cooking Instructions
Mix ingredients thoroughly. Form into a loaf shape. Bake at 300*F for 30 minutes.

Pinto Beans

Ingredients
1 lb pinto beans
8 strips bacon or 1/4 lb pork fat
water
1 med onion, diced
salt
pepper
garlic

Cooking Instructions
Sift through beans, looking for rocks, bad beans, sticks, and other things you wouldn't want to eat. Wash. Place in 5 qt pan (Dutch oven) and cover with water. Add pork and spices. Boil until beans are soft (about 3 hours)

Pot Roast

Ingredients
1 Beef Roast
4-5 Potatoes, cubed or wedged, skinned
8-10 carrots, cubed, skinned
1-2 onions, wedged
1/2 cup water
To Taste: salt, pepper, Worcestershire Sauce, basil, bay leaves, garlic 
May add stewed tomatoes, if desired 

Cooking Instructions
combine in a 13X9X2 inch pan, cover and cook for 2 hours, basting occasionally, in a 300*F oven

NOTE: On a budget, round steak may be substituted for roast

Roast Chicken

Ingredients
1 Chicken Fryer, 3-4 lbs, thawed
garlic
salt
pepper
basil or parsley

Cooking Instructions
Clean chicken thoroughly, removing innards and excess fat at neck. Brush inside of chicken with spices. Rub more spices on top. Bake at 350*F for 1 1/2 - 2 hours.

Sausage Hash

Ingredients
potatoes, diced
onion, diced
kidney beans, rinsed
Sage Sausage
Garlic
Worcestershire sauce
salt
pepper
basil
Hominy, if desired

Cooking Instructions
Cook sausage first, combine ingredients. Simmer until onions are transparent and potatoes are soft

Shell Macaroni Salad 

Ingredients
2 C Shell Macaroni (small shells), cooked
1 Medium Onion, Diced
10 oz Black Olives, halved
2 Tbsp sweet Pickle Relish
2 Tbsp Mayonnaise
Salt, Pepper, Garlic to taste

Cooking Instructions
Combine and chill. Can add turkey, chicken, or tuna.

Sopa

Ingredients
10-12 corn tortillas
1 can Cream of Chicken or Mushroom Soup
7 oz can Green chilies, diced
1 1/2 lb raw ground Beef or 1 1/2 C cooked diced chicken
1 Med onion, diced
12 oz shredded Swiss cheese
To Taste: Salt, Pepper, Garlic

Cooking Instructions
In a 12 inch skillet, combine soup and chilies, preparing soup as instructions on the can. Place over low heat. In another pan, cook tortillas. In another skillet, cook ground beef with spices. Dip tortillas in soup and line bottom of 13x9x2 inch pan with half. Top with all the meat and 1/2 of cheese and 1/2« of onions. Top with remaining tortillas and soup. Top with remainder of onions and cheese. Bake at 350*F for 30-45 minutes or until bubbly.
*NOTE: use either chicken or beef, not both.

Spaghetti

Ingredients
1 1/2 lbs ground Beef
1 Med Onion, sliced
1 12 oz can tomato sauce
1 4oz can tomato paste
12 oz water
2 Tbsp garlic powder
1 Tbsp Worcestershire sauce
1/4 tsp basil
1/4 tsp parsley
1/4 tsp sage
1/4 tsp rosemary
1/4 tsp thyme
1/4 tsp oregano
salt and pepper

Noodles
Cheese, grated

Cooking Instructions
In a Dutch oven, boil 4 Cups water with a pinch of salt. In a deep skillet, brown meat and onions, adding salt, pepper, garlic, and Worcestershire sauce. When meat is cooked, add spices, tomato stuffs, and water until sauce is desired consistency. Simmer for about 30- 45 minutes. Add noodles to boiling water and cook for about 11 minutes. Drain Noodles. Pour sauce over them and sprinkle grated cheese on top.

May add mushrooms, tomatoes, or bell pepper to sauce. May use spaghetti, rotelli, or angel hair pasta for noodles

Stuffed Pasta Shells

Ingredients:
FILLING:
1/2 lb ground beef or Italian sausage, precooked
2 Cups Chopped Spinach, blanched and drained
1/2 lb Cottage Cheese, drained
garlic
lemon juice(1/2 lemon)
Salt and pepper, to taste
1 egg, beaten
1 Tsp Oregano

12 oz can tomato sauce
1/2 Cup Romano,
Mozzarella or Parmesan
Cheese, grated
1 pkg LARGE PASTA SHELLS, cooked

Cooking Instructions:
Mix FILLING ingredients, by hand. Fill cooked pasta shells with filling. Cover with sauce and cheese. Sprinkle more oregano on top. Bake in 300*F for 30 minutes.

Tortellini Salad

Ingredients
9 oz Tortellini, stuffed or unstuffed
10 oz frozen peas
1 Tbsp butter
2 Tbsp Red Wine Vinegar salad dressing
2 Tbsp Italian salad Dressing
To Taste: salt, pepper, garlic

Cooking Instructions:
Prepare tortellini according to package instructions. Combine with salad dressings, gently, so as to not break tortellini. In a saucepan, combine peas, butter, and spices. Cook until thawed. Combine tortellini and peas in a bowl, and serve warm. 

Tuna Casserole

Ingredients
1 can tuna
2 Cups egg noodles, cooked
1 can Cream of Chicken OR Cream of Mushroom soup
1 onion, chopped
1 can peas
salt, pepper, garlic, to taste

Cooking Instructions
Prepare soup, according to directions on can. In a casserole dish, combine ingredients. Bake for 30-45 minutes at 350*F, or until noodles on top are crunchy.

Baked Beans

Ingredients
2 cans Pork and Beans
1/2 Cup Brown Sugar
Several strips crisped bacon
1 onion, chopped
1 Tbsp Worcestershire Sauce
Pepper

Cooking Instructions
In a casserole dish, combine ingredients, layering bacon on top. Bake at 350*F for 30-45 minutes.

Broccoli - Cheese Casserole

Ingredients
Broccoli, chopped
Cream Of Chicken or Mushroom soup
Mushrooms, sliced and drained
1-1/3 C Minute Rice, uncooked
2 onions, white or yellow, diced
4 slices Bacon, cooked and crushed
12 oz Velveeta, diced
1 stick (1/4 lb ) butter or oleo
Garlic and Pepper to taste

Cooking Instructions
Prepare soup as directed on can. Mix all ingredients in a 2 1/2 to 3 qt casserole dish. Bake at 350* F for 30 - 45 minutes.

OPTIONAL: place strips of Velveeta on top.

Candied Acorn Squash

Ingredients
Acorn squash
butter
brown sugar
salt and pepper

Cooking Instructions
Clean squash, cut lengthwise. Boil until almost tender. Take out of water, place on baking sheet like bowls, add other ingredients to taste. Bake at 350*F until tender. ( about 30 minutes)

Mashed Potatoes

Ingredients
1/2 potato for each serving you need, peeled and chopped 
milk
butter or margarine
salt
pepper

Cooking Instructions
Boil potatoes over medium heat, until they are soft. Slowly, add milk and butter, mixing with an electric mixer, until potatoes are smooth. Add salt and pepper to taste.

Gravy:
I don't like gravy, but, White gravy is made from milk and flour, simmered and reduced in a skillet. Brown gravy has meat drippings added.

Jalapeno Corn Bread

Ingredients
2 pkgs Jiffy Cornbread mix
2 eggs
1/2 Cup milk
1/4 Cup sugar
small can diced Jalapenos
1 can creamed corn

Cooking Instructions
Combine ingredients. Pour into a 13X9X2 inch pan. Bake at 350*F for 30 minutes or until toothpick comes out clean.

Light Dinner Rolls

Ingredients
2 pkgs yeast
1/2 Cup sugar
1 tsp salt
2 cups luke-warm water
1 egg
5 cups flour
3 Tbsp melted shortening or butter

Cooking Instructions:
In a large bowl (glass works best), combine water, yeast, and sugar. Add melted shortening (or butter) and the rest of the ingredients, slowly. Let stand, covered with a light towel, until doubled. Punch down and divide into dinner sized rolls (about 1 inch by 2 inch rolls) Let rise again. Bake at 350*F for 15-20 minutes. 

Rice Pudding

Ingredients
2 C Rice, cooked
2 Eggs, beaten 
1 C Sugar 
1 tsp Vanilla
Cinnamon to taste
Milk 
Raisins
Butter to taste

Cooking Instructions
combine ingredients in a glass casserole dish, adding enough milk to make mixture thin. Bake at 350* F to 400*F for approximately 20 minutes.
