Italian Cheese Cake
~ ~ Questa e` una buona ricetta da una amica si chiama Rachel  ~ ~
3 Pounds - (48 oz.) Ricotta Cheese
10 Eggs
2 Teaspoons Vanilla
1 1/2 Cups Sugar
2 Teaspoons Lemon Juice

Blend all above ingredients until smooth
Spray a lasagna (aluminum) pan with Pam (spray well)
Pre-heat oven to 350 degrees
Pour mixture into pan
Bake uncovered for 15 minutes then cover with foil
Bake an addtional 1 to 1 1/2 hours (watch that it does not brown on top)
Check with toothpick - when done it should be set but not totallydried out
Refrigerate when cool and serve cold

This tastes great the first day, but even better the second day!
