Rhubarb Cake


 

1 1/3 cup brown sugar

 

½ cup margarine

 

1 egg

 

1 tsp vanilla

 

1 cup buttermilk

 

2 cups flour

 

1 tsp. soda

 

½ tsp. salt

 

2 cups chopped rhubarb

 

Cream margarine, sugar, egg and vanilla; add dry ingredients and buttermilk alternately; mix well; add chopped rhubarb; pour batter into 9x13 baking pan; sprinkle on mixture of 1/3 cup white sugar and 1 tsp cinnamon; sprinkle on butter; bake @ 350º for 30 minutes
