Peanut Butter Cups


 

½ jar creamy peanut butter

 

2 tbsp. Butter or margarine @ room temperature

 

½ tsp. vanilla

 

¾ cup powdered sugar

 

2 cups (1 12oz. bag) chocolate chips

 

Beat above until well blended; stir in powdered sugar; roll ½ tsp. into a ball; repeat; refrigerate

 

Put chocolate chips in gallon sized plastic bag; press out air and close; bring 1 qt. Water to a simmer; removed from heat and put bag in; melt chocolate; snip corner of bag and squeeze enough chocolate into small cups (small cup cake pan) to cover bottom; press peanut ball into chocolate so that chocolate is covered; refrigerate until set
