Carrot Cake


 

2 cups sugar

 

4 unbeaten eggs

 

2 tbsp. baking powder

 

1 tbsp. Salt

 

½ cup nuts

 

1 ¼ cups salad oil

 

2 cups flour

 

2 tbsp. Soda

 

1 tbsp. Vanilla

 

3 cups shredded carrots

 

Mix in the following order: sugar, salad oil, eggs, flour, baking powder, soda, salt, vanilla, nuts and carrots; bake @ 350º for 40 minutes in 9x13 pan

 

Frosting:

 

½ pkg. (4oz.) cream cheese

 

1 ½ tbsp. Oil

 

1 ½ cups powdered sugar

½ or 1 tbsp. vanilla
