Chicken Fried Rice

4 cups cold cooked rice
8 ounces cooked chicken, chopped
2 eggs
1/3 cup chopped green onions
1/2 cup julienned carrots
1/2 (or more) soy sauce
1/2 chicken broth
salt & pepper

Beat the eggs, pour into a wok and cook.  Turn the eggs over once.  Cut the eggs into strips and set aside.

Heat more oil in the wok.  Stir fry the onions and carrots for a few minutes.  Remove and set aside.

Add more oil to the wok and turn the heat down to medium.  Fry the rice until it's a little crispy.  Add the soy sauce and chicken broth.  Add the chicken and vegetables.  Stir all together and add salt & pepper to taste.  Add the egg strips.  Serve hot.

 

Fried Chicken Dumplings

1 large chicken breast, cooked and chopped
1/4 cup diced green onions
1/2 teaspoon minced garlic
1/4 cup grated carrots
1/4 cup soy sauce
1 teaspoon sesame oil
1 package wonton wrappers

Place all ingredients (EXCEPT CARROTS) into a food processor and process until just chopped nicely.  Stir in the carrots. 

Lay a few wonton wrappers out on the table.  Place about 1 teaspoon of the chicken mixture into the center of each.  If you have a dumpling press, place the wonton on the dumpling press and then add the chicken mixture.  Rub a little water around the edges of the wonton and fold it in half.  Press down with a fork.  Heat some oil in a skillet.  Keep the heat low-medium and cook the wontons slowly.  Cook only on one side.  Place cooked side down on a platter and continue cooking the remainder.  While some are cooking, you can go back to assembling the rest of the wontons.

Makes about 40 wontons.

You can also assemble the wontons and place them in a steamer instead of frying them.
