BAKED ZUCCHINI CASSEROLE

2 lbs zucchini, grated
1 med onion, diced
1 garlic clove, minced
2 T olive oil
1 cup seasoned bread crumbs, divided
8 oz shredded cheddar cheese, divided
2 eggs
1 cup milk

Saute zucchini, onions and garlic in olive oil for 10-15 minutes or until softened. Stir in milk, eggs, salt & pepper to taste, 1/2 cup bread crumbs and half of the cheese. Spoon into baking dish, top with remaining bread crumbs and cheese. Bake at 325 degrees for 30 to 45 minutes.
