CHATS


            PAW BHAJI

          Preparation:
            1 cup of chopped onions
            2 cups of chopped tomato
            1 cup of smashed  boiled potatoes
            boil...........green peas, cauliflower, carrot(optional)

          Method:
            Heat 30 gms of butter into a flat pan
            +chopped onions..............fry till golden brown
            +chopped tomatoes
            +boiled vegetables
            +1/2 spoon turmeric powder
            +1 spoon red chili powder
            +smashed boiled potatoes
            +chopped green chilies
            +finely chopped coriander leaves
            +salt
            +2 spoons of tomato ketchup............give a good boil, till it becomes like a paste
            Take paw, slit  the paw in-between, spread butter and place it on the tava, fry it till light brown

            Serve hot paw and bhaji, garnish with a piece of butter on the bhaji, onion rings,
            coriander leaves and lemon piece

            BHEL PURI

          Preparation:
            chop 1 medium size onion
            chop 1 tomato
            make 2-4 spoons of tamarind pulp
            boil i cup of potatoes
            make green chutni...............few coriander leaves and 3 pods of garlic

          Method:
            Take 2 cups of puff grains
            + small pieces of papadi ( knead usual chapati atta, make into small papadi, deep fry)
            +6-7 spoons of thin sev
            +boiled aloo
            +chopped onions
            +green chutni
            +tamarind pulp
            +chopped green chilies
            +chopped coriander leaves
            +1/2 spoon bhel puri masala
            +1/2 spoon red chili powder................give it a stir in a wide vessel/bowl

            Garnish with some more papadi, tomatoes and coriander leaves.

            PANI PURI

          Preparation:
            chop coriander leaves
            chop 1 onion

          Method:
            To make pani...................
            Take 2 cups of water
            +1/2 spoon of black salt
            +1/2 spoon jeera powder
            +small piece of jaggery/sugar
            +1 spoon chat powder
               +1 spoon of tamarind juice
            +coriander leaves
            +1-2 pudina leaves
            +2-3 chopped green chilies
            +small piece of ginger............mix it well and strain the water

             For Puri
            knead the usual chapati Atta, make into small puri and deep fry

            For Green Chutney
            wet grind, pudina, 4 green chilies, small piece of ginger, coriander leaves

             For Sweet Chutney
            boil equal proportion of dates and tamarind (if you have dry dates, soak it n water and then boil
            bring it to a pulp consistency
            +water
            +pinch of red chili powder
            +1/2 spoon daniya powder
            +black salt

             Serve the puri with Pani, Green chutney, Sweet chutney, boiled  Moong   daal and boiled
                Potatoes

            CHATPATI ALOO

          Preparation:
            make a paste of......................2 spoons of red chili powder, 1/2 spoon turmeric powder, 1 spoon
            lemon juice, salt, 1 spoon of chat masala
            boil 2 cups of baby potatoes

          Method:
            Mix the  boiled baby potatoes in the above made paste and keep it aside for 1/2 hour
            Heat about 1/2 cup of oil in a pan
            shallow fry the baby potatoes

            Garnish it with onion rings.

            KACHODI

          Preparation:
            make a dough of 1 cup maida, salt and 3 spoons of oil

            For stuffing............
            boil green peas and wet grind( do not make a smooth paste)
            heat 2 spoons of oil in a pan,
            +ground peas...........stir it well to make it dry so that there is no water content at all
            +1 spoon of jeera powder
            +salt
            + 1 spoon of red chili powder

          Method:
            take maida atta as made above, pat it on your hands to make a small puri
            fill 1 spoon of peas stuffing's and close it from all the sides with your wet finger
            Now roll it as you make  usual the  puri
            deep fry till golden brown

            serve it with sweet chutney

            PANEER RAJI

          Preparation:
            marinate paneer with................
            +1/2 spoon of chili powder
            +1 spoon ginger/garlic paste
            +1/2 spoon turmeric powder
            +1 spoon lime juice
            +1 spoon garam masala powder
            +salt..............keep it aside for 1 hour
            take 1 cup of maida and salt, add water and make it a thick paste, non drip consistency

          Method:
            dip the marinated paneer into the maida paste
            take 1 cup of crushed corn flakes
            roll the paneer pieces or dust the paneer on the corn flakes (coat it from all the sides)
            deep fry the paneer pieces

            Garnish with coriander and lemon pieces

        POTATO MEDLEY

          Preparation:
            boil and smash 2 cups of potatoes
            chop 1/2 cup of onion

          Method:
            take a pan
               +boiled potatoes
            +chopped onions
            +chopped mushrooms (optional)
            +1 cup grated cheese
            +3 spoons of chopped coriander leaves
            +2 spoons of chopped green chilies
            +1 spoon black pepper powder
            +salt..........mix all the ingredients and make into small balls

            mix 1 cup of maida in water with pinch of salt
            dip the potato balls into the maida mixture
               roll the balls on bread crumbs
            deep fry the potato balls

            Garnish with onion rings and tomato sauce.
