1 - 9 inch pastry
2 tablespoons olive oil
1 1/2 cups onion chopped
1 lb apples, chopped
10-11 ounces cooked, peeled hazelnuts coarsely chopped
1/2 teaspoon thyme
1/2 teaspoon sage
1 medium egg beaten
1/4 teaspoon each salt and pepper
Heat oil in a saucepan and sauté onions until they are golden brown. In a large bowl combine onions, apples, hazelnuts, herbs, salt, pepper and eggs. Fill the pie shell and place on top shell. Bake at 350 degrees for 40 to 50 minutes or until golden brown.
