Seafood Stock
2 quarts water
6 stalks celery, cut into pieces
2 large onions, peeled and quartered
2 cloves garlic, peeled
� lemon
Fresh shrimp heads, shells
Fresh fish bones

Combine all ingredients in large stockpot and bring to rapid boil.  Reduce heat to low and simmer slowly 2 to 8 hours depending on strength of flavor desired.  Strain before using.
Always Use Fresh Seafood!
