| Chicken and Okra Gumbo 1/3-cup vegetable oil 2 lbs. okra, sliced 1 large onion, chopped 6 to 8 cloves garlic, minced 1- 4 to5 pound fresh hen, cut up Salt and Pepper to taste 3 or 4 small slices salt meat 8 to 10 cups boiling water Season chicken with salt and pepper. Place in heavy pot and let brown well uncovered. Set aside. Put salt meat in nonstick pot. Fry until brown; add okra, salt, pepper and garlic. Smother until all moisture is absorbed and okra gets brown and looses its slime. Mix with chicken; simmer about 20 minutes. Add 8 to 10 cups boiling water; cook about 2 hours. Skim fat. Serve with rice. Makes 8 to 10 servings. |
