VEGETABLE KURMA:
Onion=2
Tomato=2
Gingergarlicpaste=2tsp
Red chilli powder=1tsp
Turmeric powder=1/2tsp
Curry leaves=few
Oil=3tsp
Coconut=3/4 cup
Anise seeds=3/4tsp
Green chilly=2
Mustard seeds=1/4tsp
Salt to taste
Potato=1
Carrot=1/4cup
Beans=1/4cup
Green peas=1/4cup
Chopped Mintleaves=3tsp
Grind the coconut, aniseseeds and chilli into a fine paste.
Chopped the onions and tomatoes finely.
In a heated pan add oil and add mustard seeds.
When it splutters add gingergarlicpaste, onion, tomato, curry and mintleaves
and fry it well.
Then add chilli powder, turmeric powder, all the vegetables and salt and cook it till
all the veggies are cooked.
Add the grinded mixture and a cup of water and boil it for few minutes.
