SAMOSA:
For The Dough:
All purpose flour=2cups
Oil=3tbs
Salt to taste
Cold water for mixing the dough
For Masala:
Potatoes=3
Peas=1/2cup
Onion=1/2cup
Green chillies=3
Red chilli powder=1/2tsp
Turmeric powder=1/4tsp
Anise seeds=1/4tsp
Garam masala powder=1/4tsp
Salt to taste
Oil for frying
Mix maida and salt in a bowl. Add 4tbs of oil in a pan
and heat it and pour it in the bowl. Then knead this into
a soft dough by adding required amount of water.Close
the dough with a lid and set aside far half an hour.
Cook the potatoes, peel and mash them. Heat up a pan and
add 2 tbsp oil. Then add anise seeds and add the onion
and fry for a minute. Also add the salt, chilly powder,
turmeric powder and garam masala powder and mix well.
Add the mashed potatoes, peas and stir well and cook
for few minutes.{{Masala should be dry.}} Keep aside to cool.
Make small balls of the dough and roll into round shape using
a roller.Cut into 2 semi-circles.Then take one semi circle and
fold it in a shape of cone . Stuff the masala in that cone and seal
it by taking a drop of water on finger. Deep fry until it becomes crisp.
Serve it with tomato ketchup.
