MUTTONBRIYANI:

Mutton=100gm
Basmati rice=1cup
Water=1 1/2cup
Onion(thinly chopped)=1 cup
Tomato(finely chopped)=3/4cup
Ginger=2 inch
Garlic=8
Greenchilly=1
Turmeric powder=3/4 tsp
Redchillipowder=1tsp
Coriander seeds=1tsp
Anise seeds=1tsp
Cinnamonstick(small)=1
Cloves=3
Kesaripowder=a pinch
Garam masala powder=1/4tsp
Mintleaves=1/4cup
Coriander leaves(finely chopped)=4 tbs
Oil= 3tsp
Ghee or dalda=2tsp
Salt to taste

Cut the mutton into small pieces. Grind the ginger, garlic and aniseseeds into a fine paste. Cook the mutton with a little salt and turmeric powder in a pressurecooker till its soft. In a cooker add oil and dalda and heat it. Add cinnamonstick, cloves and fry it for a few seconds. Add gingergarlicpaste, mintleaves, corianderleaves, onion and tomato and fry it well. Add the mutton, turmeric powder, chilli powder, 1 1/2 cups of water, salt and rice and stir it well. Close the cooker with the lid and turn the flame to medium high. Once you get the pressure, put the weight on the cooker and turn the flame to medium low and keep it for 8 minutes. After 8 minutes remove the cooker from the stove and keep it aside. After 10 minutes remove the lid and stir the rice well and serve it with onionraita.
