LADDU:
Gram flour=1cup
(Besan)
Sugar=1 1/4cup
Ghee=4tbs
Cashews=10
Raisins=6
Cloves=4
Kesari powder=a pinch
Cardamom powder=1/4tsp
Sugar candy=4tbs
(Kalkandu)
Mix besan, kesari powder and
the required amt of water to make into a thick liquid
to the consistency of dosa batter. Heat oil in a
frying pan .In the meantime in a pan add 1/4cup of
water and bring it to boil.Then add sugar and cardamom powder
to it.Put it in a medium heat keep stirring till the
syrup reaches one string consistency.
(Care Should Be Taken That The Sugar Syrup Is Not Over Done.)
When the oil is heated up, using a cup pour the mix
little by little on a (boondiplate)perforated spoon to make
boondis.Stir the boondhis until its fully cooked.
Continue with the remaining mix.In a heated pan add ghee
and fry cashews,raisins and cloves.Drop the boondis
into the sugar syrup and mix well.Then add cashews,
raisins,cloves and kalkandu and mix well.
Now make into even balls by pressing lightly with hand.
Allow to cool.
