KOZHUKATTAI:
Rice flour=1cup
Jaggery=1/2cup
Grated coconut=1cup
Water=1cup
Cardamom powder=1/2tsp
Milk=2tsp
Oil=4tbs
Heat water to boil and add riceflour gradually
stirring continuously to avoid lumps. Simmer on a slow fire.
It will become a cooked paste. Remove from fire and after it
cools a little, knead the dough well with your hands.
In another pan pour a little water and add the jaggery.
After the jaggery begins to boil, add the grated coconut
and cardamom powder.Heat this mixture in low heat with
constant stirring until it comes as a paste.Take a small ball
of dough and make a small cup with your fingers.
Grease the hand with oil to get the shape.
Put a little of coconutjaggery mixture and close it by
extending the covering flour.Place these in a plate and
steam in a pressure cooker for about 8 minutes.
