Idli:
BoiledRice or IdliRice=2cups
Rawrice=1/2cup
Urud dal=1/2cup
Fenugreek seeds=1/4tsp
Rinse and soak the above ingredients in water for
about 5-6 hours. Grind urud dal to finepaste till slightly
frothy. Grind rice till fine grains are left (like very fine semolina).
Mix both rice and dal together after grinding. Add salt and keep it
aside for atleast 10 hours to ferment. Take idli plates and
place a drop of oil in each idli mould and spread it over the entire mould.
Heat 11/2 cups of water in a idli cooker or pressure cooker and
place the filled idli plates and cover with lid. Steam for 8 minutes.
Remove the plates from the cooker and remove the idlis. Serve hot
with chutney or sambar.
