Brinjalgothsu:
Brinjal=4
Chopped Onion=1/2cup
Chopped Tomato=1/4cup
Ginger= small piece
Curryleaves= few
Turmeric powder=1/4 tsp
Tamarindpaste=1/4 tsp
Green Chillies=4
Oil=2tsp
Salt to taste
Mustard seeds=1 tsp
Urad Dhal=1/2 tsp
Cut brinjals into medium sized pieces vertically.
and chop ginger finely.
Heat oil in a kadai and season with mustard, urad dal and add curry leaves.
Put slit green chillies, ginger, then add onions and tomatoes andfry for a minute and then
add brinjal and saute for few minutes. Then add turmeric powder, salt and add
a little amount of water and cook it till brinjal becomes soft. Add the tamarind
extract and cook for a few more minutes. serve it with pongal.
