BRINJALRICE:
Rice=1cup
Brinjal=4
Onion(finely chopped)=3/4cup
Tomato=1/4cup
Garlic=2
Turmeric powder=1/4tsp
Red chilli powder=1tsp
Salt to taste
Oil=3tsp
Cut the brinjal into small pieces. Crush the garlic with skin.
In a heated pan add 3tsp of oil and then add onion, tomato and garlic and fry it well.
Add turmericpowder, chilli powder and salt and a little bit of water.
Cover and simmer till the brinjal is cooked completely.
Stir it well.
Cook the rice and put it in a large plate and allow it to cool for few minutes.
Add the brinjal thokku to the rice and mix it well.
