STILL IN OUR HEARTS Many thanks to the Still in Our Hearts room for welcoming us into their room when our Sands of Time room closed. We were very lucky to find a room where all of our family would be able to come and play. The players of the room are friendly and lots of fun. We have kept the family together and are making new friends along the way. Let's all have fun in Pogoland!!!!!! Irish Soda Bread Ingredients: Sift together dry
ingredients
Corned Beef & Cabbage Ingredients (8 servings) 5 lb Corned-Beef Brisket
Instructions: Wipe corned beef with damp paper towels. Place in large kettle, cover
with water. Add garlic, cloves, black peppercorns, and bay leaves. Bring to boiling.
Reduce heat; simmer 5 minutes. Skim surface. Cover kettle; simmer 3 to 4 hours, or until
corned beef is fork-tender. Add carrots, potatoes, and onions during last 25 minutes. Add
cabbage wedges during last 15 minutes. Cook vegetables just till tender. Slice across the
grain. Arrange slices on platter with cabbage. Brush potatoes with butter, sprinkle with
chopped parsley. Serve along with rest of vegetables and "Mustard Sauce". CORNED BEEF AND CABBAGE 1 lean corned beef boiled and cooled 1 large head cabbage 1 small onion 1 cube butter or margarine |

THE LEPRECHAUN'S STORY Once upon a time a little leprechaun came to the village looking for his pot of gold. He looked high and he looked low, but had absolutely no luck at all. He had been sure he would find it here in the village for the town lay at the end of the rainbow he had seen in the morning. Poor Finnegan, that was his name, sat down on the curb and began to cry. Oh he sounded piteous, he did. "Ah me poor lost gold. "Just then a little boy came by and after looking at Finnegan for a few moments said, "Please littleman, don't cry. I will try and find yur gold.” "Ah ur a sweet boyo, but I think some thief has taken it. The boy said, "I know what. Let's go ask the witch. She knows everything that goes on here." "Well I guess it couldn't hurt." Said Finnegan. So the boy and the leprechaun set off down the street to the cottage of witch Hazel. They knocked loudly on the door and soon, it was opened by a pretty little blond curly haired lady leprechaun. (You could tell by her pointy ears) "What do u want my friends?"said Hazel. "Poor Mr.Finnegan has lost his gold and we want to know if u can help him find it?" said the boy. Sweet little Hazel smiled and said, "I don't think I can help find ur gold Mr.Finnegan, but I think u have found something much more valuable. Au have found a friend and a friend is worth more than all the gold in the world."Finnegan smiled and said "I think u might feel better already." "Good" said Hazel "And now u have found another.I am making Irish stew tonite and would enjoy ur company if u care to join me". And you can be sure he went that nite and many more. Now he and Witch Hazel are an old married couple,and the proud parents of twin babies.
I IRISH STEW (This recipe came straight from
Ireland)
4 strips bacon, cut in 1 inch
sq 2 lbs stew meat cut in 1 inch
cubes 1 lge onion chopped 12 red potatoes stalks celery, sliced 4 or 5 lge carrots, sliced 1 can tomato paste 2 cans beef broth salt and pepper as needed
Brown bacon in large roasting pan (this recipe cooks in oven) and brown in bacon drippings. Remove meat from pan and set aside. onion and carrots to pan
and saute until onions go translucent. Sprinkle 3 tbs flour over carrots, Return meat to pan and add broth and tomato paste. sauce if u want). Put in 350* oven and bake for 45 minutes. Remove from oven and add Taste to see if u need salt and
pepper. Add if needed and return covered roasting pan to oven for 45 anything if it stays in
oven with Irish soda bread or baking
powder biscuits. |
