GRAMMY'S HOT WATER SPONGE CAKE	
			Preheat oven to 325o

4 eggs separated	       * 1-1/2 C cake flour
1-1/2 C sugar		1/4 tsp salt
1/2 C boiling water	1-1/2 tsp bkg. powder
1-1/4 tsp orange, lemon or almond extract

*(Use 1-1/2 Tbsp less if regular flour)

Beat egg whites till stiff. Beat yolks till
thick and slowly add sugar. Next, add water,
then flour. Add extract and fold in beaten
egg whites. Pour into ungreased tube pan.
Bake for one hour. 

Cool upside down.
