SCALLOPED SCALLOPS ~ Harborside Inn, Martha's Vineyard				

"Pictorial Edgartown, on Martha's Vineyard Island, is famed for its
houses of old whaling captains. The Harborside Inn occupies six of these
serene, classic beauties. They form a sun-drenched courtyard which leads
past the pool, down to the private docks. Embracing everything, the tang
of the sea is mixed with the fragrance of those incredible flowers."

I can smell the mix of the salt air and scallops as I type this!

Bake @350o

1 quart Bay Scallops		1 C milk
6 medium potatoes, thinly sliced	1/4 # butter (1 stick)
6 medium onions, thinly sliced	Small box of saltines, finely crushed

Butter a Pyrex casserole. Place in layers: scallops (do NOT soak or wash -
use fresh, if possible, right from the container), potatoes, onions,
saltines and a light dust of salt and pepper. Repeat layers until all
ingredients are used. Pour milk evenly over all and dot with about six
walnut-sized pieces of butter. Place in preheated 350o oven uncovered 
for about an hour or until potatoes are cooked.
