HUMMUS ................. Makes about 2 Cups
1 can (19-20 oz) chick peas 3 cloves garlic, minced
1/2 tsp salt 1/4 C water (if desired)
Juice of 2 lemons 6 Tbs Tahini paste = a rounded 1/3 C
Rinse & drain chick peas.
Process with salt, lemon juice, Tahini paste, and garlic until smooth.
Serve at room temperature with crackers, pita, or cut up veggies.
(Warm in microwave slightly if refrigerated, then garnish.)
Garnish with Parsley, Olive oil & Paprika
Note: Stab lemons & microwave on high for 30-seconds for maximum juice.
A 19-oz can of chick peas = 12 oz. drained in case you want to increase recipe
