CHICKEN - COUNTRY CAPTAIN CASSEROLE - Good Housekeeping	350o

2 Tbsp + 1 tsp olive oil			3 Tbsp curry powder
2 3-1/2# chickens, skinned, cut up		1/2 tsp black pepper
2 medium onions, chopped			1/4 tsp ground cumin
1 lg. Granny Smith apple, peeled,		1 28-oz can tomatoes in puree
   cored + diced				1/2 C raisins
3 lg. garlic cloves, minced			1 tsp salt

1 Tbsp gingerroot, peeled + grated		
1-1/2 hours before serving:
In 8-at. Dutch oven over medium heat, brown chicken in batches.
Add tsp oil; cook next 5 ingredients 2-minutes.
Reduce heat to medium and cook 5-minutes more.
Add seasonings plus chicken; boil 1-minute.

Cover Dutch oven and bake 1-hour or till chicken juices run clear.

Serve with hot cooked rice.
