CHEESE MUFF from my Nana

Butter three or four slices of bread and
place in a greased baking dish. Between
the silces put salt, pepper and grated
cheese. Beat two eggs in a pint of milk;
pour over the bread; grate cheese on top
and bake half an hour in a moderate oven
or 40 minutes. DO NOT COVER.

(This is a simple and very forgiving souffle.
   Use sharp cheddar for the best flavor.)
