Preheat oven to 375o
Salt and pepper the roast (have @ room temp.)
Roast for one hour, then turn off oven - DO NOT OPEN DOOR!
Allow three hours in the oven to complete the cooking!

If meat is frozen solid, simply roast for 1-1/2 hours

If meat needs reheating before serving, warm in 300o oven.

Preheat oven to 500o
Rib roast, eye round or rib eye

Dredge roast with flour, salt and pepper.
Roast with bone down, or put boneless roast on rack.
Roast for 5-minutes per pound; turn off oven. DO NOT OPEN DOOR!
Let roast sit for at least one hour and up to 3-hours.
Pink in the middle + crusty outside. 

For a large roast you may prefer the first version 
as the oven might smoke due to high heat.
