| Snowball Rolls/Bread Difficulty level: 4 Mix: 2 cups warm water 1/2 cup sugar 1 teaspoon salt Stir in 2 packets yeast until dissolved Add: 1 egg 1/4 cup soft shortening 6 and 1/2 cups all purpose flour Cover, let rise 1 & 1/2 to 2 hours. Preheat oven to 400 degrees F. Place dough in two greased and floured loaf pans for bread, or make rolls on a greased cookie sheet, and bake until crust is golden brown. *For a shiny golden crust, beat 1 egg and baste over crust before baking. *Unrisen dough can be frozen for several months and then taken out to rise and bake, or can be refridgerated overnight and baked in the morning. *From my Great Grannie Bryant* |
| Banana Nut Bread Difficulty level: 3 Ingredients: 1 cup sugar 1-1/4 cup flour 1/2 cup Crisco Shortening 1/2 tsp. salt 2 eggs 1 tsp. baking soda 1 tsp. vanilla 1/2 cup pecans, chopped 3/4 cup banana (1 medium banana) Preheat oven to 350-degrees F. Mix sugar, shortening, eggs, vanilla, and banana. Combine flour, salt and soda, and add to wet ingredients. Bake for 50 min, in a large greased & floured loaf pan. (or 2 small loaf pans) When mixing batter be generous with the flour. From a family friend |
| Cranberry Pound Cake Difficulty level: 4 Ingredients: 3 cups sugar 2 cups, (4 sticks) softened butter 6 eggs 4 cups flour 3/4 cup milk 1 teaspoon vanilla extract 1 teaspoon almond extract 1 1/4 cups dried cranberries First preheat oven to 325 degrees F. Cream sugar and butter; add eggs one at a time and beat well. (with a tabletop mixer) Alternate flour and liquids as you add them. Set mixer aside and fold the cranberries in with a spatula or wooden spoon. Bake in a 10-inch tube/bundt pan for 1 hour and 50 minutes. No, that's not a misprint, this cake takes quite a while to bake. Be sure to have an adult help you remove the pan from the oven because it is very heavy. Let cool 10 minutes and dump out into a serving plate.
