Recipe:
Leipziger Lerchen
Pastry Ingredients:
250 grams of flour, i egg, one generous pinch of salt, 1 teaspoon brandy, 70 grams sugar, 125 grams butter
Filling:
250 grams apricot jam, 125 grams butter, 150 grams icing sugar, 1 egg yolk, 150 ground almonds, half bottle almond essence, 75 grams flour, 1 dessert spoon, corn flour, 4 egg whites, butter to grease baking tins
Step 1, Sieve flour into a bowl and make a hollow in the middle. Add egg, salt, and brandy, sprinkle on sugar add butter in small knobs. work into dough. Put in a cool place for 30 minutes.
Step 2, for the filling pass apricot filling through a sieve. Pkace butter in a bowl and beat until fluffy gradually adding sugar, egg yold, almonds, almond essence, flour and corn flour mixing well. Whisk the egg whites until stiff and fold carefully.
Step 3, Grease 6 cm tartlet tins. Roll out pastry to 5mm thinkness and line tins. Set aside pastry trimmings. Prick pastry to avoid blistering.
Step 4, Spread jam on pastry and cover with almond mixture. Decorate each tartlet eith two crossed pastry strips. Preheat oven to 180 degrees, and bake for 20 minutes. Remove, turn out of tins and turn back immediately.
