Bengal, the land of sweets. Bengalis are fond of sweets too. Probably this is the reason bengali is considered to be one of the sweetest language of the world. I am also very fond of sweets. here I have tried to present an idea about preparing the major kind of sweets which are loved by bengalis.I promise to keep on updating this page with new recipies. Makha Sandesh

Ingredients

  • Cottage cheese - 1/2 Kg.
  • Thickened milk - 250 gm.
  • Wheat flour - 100 gm.
  • Sugar - 500 gm.
  • Green cardamon powder
  • Method

    Mix cheese and thickened milk together. Mix sugar with the mixture. Heat the mixture in a pan in low heat. Water will start coming from the mixture. When the water evaporates completly, sprinkle powdered cardamon over the mixture and mix it throughly. Cool and then serve.

    Moong Sandesh

    Ingredients

  • Moong beans - 1 Kg.
  • Cottage cheese - 250 gm.
  • Thickened milk - 250 gm.
  • Wheat flour - 200 gm.
  • Sugar - 500 gm.
  • Clarified butter - 300 gm.
  • Green cardamon powder
  • Method

    Boil Moong beans but do not melt it by overcooking. Drain out the water completely. Mash it with a hand knitter and then mix with cheese, thickened milk and flour. Then prepare small balls out this mixture. Heat clarified butter in a frying pan and fry all the balls till they turns brown. Prepare the sugar syrup and dip all the balls into it and bring it to boil. Then remove the sweets, cool them and sprinkle some powdered cardamon over them before serving.

    Lengcha

    Ingredients

  • Cottage cheese - 500 gm.
  • Wheat flour - 500 gm.
  • Sugar - 500 gm.
  • Clarified butter - 500 gm.
  • Method

    Mix wheat flour and 100 gm of clarified butter. Then mix mashed cheese with this mixture. Prepare a dough of this mixture by adding little water. Make small balls of this dough. Give all the balls oval shape and fry in clarified butter. Prepare a thick sugar syrup and dip all the fried lengchas in it. After sometime remove them and allow them to cool.

    Channar Sandesh

    Ingredients

  • Cottage cheese - 1 kg.
  • Sugar - 1 kg.
  • Green cardamon powder.
  • Method

    Mix cheese with sugar. Then heat the mixture in a low heat by continuous stirring it. When all the water evaporates, remove it and prepare square shaped sandesh pieces. Sprinkle some cardamon powder over the sandesh before serving.

    Kancha Golla

    Ingredients

  • Cottage cheese - 1 kg.
  • Sugar - 500 gm.
  • Wheat flour - 100 gm.
  • Cardamon powder.
  • Method

    Mix flour,cheese and sugar into a fine mixture. Then take the mixture in a pan to heat and stirr it continously. When the water is almost evaporated, remove it from heat. Make small balls out of the mixture after cooling it. Sprinkle some cardamom powder over it before serving.

    Danadar

    Ingredients

  • Cottage cheese - 500 gm.
  • Semolina - 300 gm.
  • Wheat flour - 200 gm.
  • Sugar - 1 Kg.
  • Clarified butter - 500 gm.
  • Cardamon powder.
  • Method

    Mix cheese, flour, semolina and a little sugar throughly into a fine mixture. prepare a light sugar syrup. Make small balls of the mixture and fry in clarified butter in a low heat till they turns brown. Then dip them in the sugar syrup and heat for 8 - 10 minutes. Sprinkle some sugar on a tray. Then keep the fried sweets and again sprinkle some sugar and cardamon powder over them.

    Labangalatika

    Ingredients

  • Thickened milk - 500 gm.
  • Semolina - 200 gm.
  • Wheat flour - 500 gm.
  • Sugar - 500 gm.
  • Raisins
  • Nuts & Pistachio
  • Clarified butter for frying
  • Cardamon powder.
  • Cloves
  • Method

    Fry the nuts and pistachio in clarified butter. Then put thickened milk, semolina and raisins. When semolina gets fried, put some water and 200 gm of sugar. When the water evaporates remove the mixture and keep it. Now mix 100 gm of butter and flour together. Prepare a soft dough. Prepare very small chapatis from that dough. Take some mixture prepared before and put it in the middle of the chapati. Fold it into square shape and close it with a clove in the middle. Prepare all the sweets like this and fry them in a low heat. Dip all fried sweets in sugar syrup. Remove them after some time.

    Rasmadhuri

    Ingredients

  • Cottage cheese - 1 Kg.
  • Wheat flour - 500 gm.
  • Sugar - 500 gm.
  • Cardamon powder.
  • Method

    Prepare sugar syrup. Mix cheese with flour and prepare a very soft dough. Make small ballls and fry them. Dip the balls in the hot sugar syrup. After heating them for sometime, put them in a sugar sprinkled tray. After they gets covered with sugar remove and sprinkle cardamon powder over them.

    Sitabhog

    Ingredients

  • Cottage cheese - 200 gm.
  • Wheat flour - 250 gm.
  • Sugar - 500 gm.
  • Clarified butter - 200 gm.
  • Method

    Mix flour and 50 gm. of butter throughly. Them mix cheese with the mixture and prepare a fine mixture. Now take the rest of butter in a pan and heat it. Take a mesh or an iron net over the pan, take some of the mixture in your hand and press and rub it against the net. Small droplets of the mixture will start coming out of the net which should be fried in a low heat. Then remove those droplets from the pan with the help of a strainer. Prepare a sugar syrup and put those droplets in a the syrup. Remove them after sometime.

    Mihidana

    Ingredients

  • Gram flour - 500 gm.
  • Wheat flour - 300 gm.
  • Sugar - 500 gm.
  • Clarified butter for frying.
  • Water for making paste.
  • Method

    Mix gram flour with wheat flour, then pour some water and make a thick paste. Take clarified butter in a pan and heat it. Take a mesh or an iron net over the pan. Take some paste and press and rub it against the net. Small droplets starts coming out the net. Fry those droplets and dip them in the sugar syrup. Remove them after sometime.

    Mango's burfi

    Ingredients

  • Ripe mango's syrup - 1 lit.
  • Nuts, Pistachio and Raisins.
  • Sugar(according to the degree of sweetness of the juice.)
  • Clarified butter - 50 gm.
  • Cardamon powder
  • Method

    Thicken the mango syrup to half a litre by heating. Then mix it with dry fruits and sugar. Pour the butter into the syrup.When the mixture turns to a thick paste remove it from heatand sprinkle some cardamon powder over it. Then stirr the mixture properly. Spread some butter on a dish and then pour the paste on it. When it gets cooled cut it in the shape of burfi's.

    Badam's Burfi

    Ingredients

  • Dressed badam/nuts - 500 gm.
  • Thickened milk - 250 gm.
  • Sugar - 500 gm.
  • Clarified butter - 50 gm.
  • Cardamon powder.
  • Method

    Make a powder of the nuts. Fry the powder in butter. Mix thickened milk and cardamon powder with the fried powder. Now pour a syrup of the sugar into the minxre. Stirr the mixture continuosly. When the mixture turns into a thick paste then pour it into a large dish and spread it evenly. Cut it into small pieces after it gets cooled.
