Baked Ziti
Cook ziti al dente. In large skillet brown ground beef and onion. Remove from heat and add next 6 items. Mix well. Add ziti, 1/2 of spaghetti sauce and 1/2 of mozzarella cheese. Mix. Put into a 13 x 9 inch pan and top with reserved sauce and cheese. Bake at 350 degrees for 30 minutes or until bubbly.
To freeze: Freeze in foil pans before baking.
To serve: Thaw in fridge. Bake at 350 degrees for 60 minutes or until bubbly.
Super Frito Pie
Brown beef and onion and drain. Stir in remaining ingredients. Simmer about 15 minutes.
Layer on plates: Fritos, shredded cheese, meat mixture, lettuce, tomatoes. (Also good with onions, avocados, sour cream, black olives, and jalapenos.)
To freeze: After simmering cool completely. Place in large zip lock freezer bags and freeze.
To serve: Thaw in fridge. Place in saucepan and heat through.
Steak Fingers
Tenderize steak by pounding with a mallet. Cut into 3-inch long strips. Combine egg, milk, salt and pepper in a shallow dish, whisk until well blended. In a large skillet over medium heat, heat oil. Coat steak pieces in flour. Shake off excess then dip in the egg mixture and again in flour. Fry the strips in the hot oil until golden brown; about 2 minutes. Transfer to a plate lined with paper towels to absorb oil.
To freeze: Flash freeze. Once frozen place in zip lock bag.
To serve: Remove desired number of strips and microwave until heated.
