Meat Pottage

(any meat or poultry boiled in almond milk flavored with honey and spices)

5 lbs cubed meat

almond milk to cover 4T honey

1 t cinnamon

1/2 t cardamom

1/2 t pepper

boil until meat is fully cooked

Roasting Meats & Birds

Use a good sturdy spit over a low fire or good hot coals marinate flesh in wine with spices and vegetable (onions, leeks, etc) for a few hours at least apply a generous coat of oil or other fat before roasting try not to pierce the flesh in to many places or it will be very dry
