Anthroll Broge (Scottish)

oatmeal cooked in beer and honey

Bannocks

1 egg

pinch salt

1 pt milk

oatmeal

1/4 t baking soda

beat egg & stir in milk, mix in salt & soda & enough oatmeal to make a good dropping batter, coat a gridle with fat & drop batter in small mounds, cook over medium heat until bubbles form on surface, turn over & cook other side, serve with butter & honey

Oat Cakes

4 oz fine oatmeal + extra for rolling out

1/8 t baking soda

1 t melted butter

hot water enough to bind ingredients

mix and roll out in extra oats, cut into 6 wedges, cook on fatted griddles until edges curl, turn & cook other side, serve with butter & honey

Peasant Rye Bread

4 c rye meal (cracked rye)

1 c cracked wheat

1 1/2 t salt

2 T honey

1/4 c wheat bran

3 c boiling water

mix dry ingredients, then add honey & water, cover & let sit overnight, add more flour if needed and shape into a loaf, bake in a covered pan at soo F for 4 hrs (place an open pan of water on the shelf below)

Spice Bisquits

6 med eggs

1 c light brown sugar, sifted to eliminate clumps

1 c white sugar

4 c unbleached flour, sifted

4 t cinnamon

1 t clove

1/2 t ginger

Beat eggs until light and a little frothy, add spices, beat in sugars (tilt beater and add to add air, beat until thick), beat in flour 1 cup at a time mixing well to add air, form balls of dough and flatten between floured fingers to about 1/8 inch thick (or thinner if possible) and 3 inched in diameter, bake on greased sheet at 325 for 15 min, cool on rack and store. These bisquits will last indefinately, although they will harden a great deal over time, if to hard just break up (with hammer) and suck on them until soft enough to chew, or douse with hot milk or wine.

Viking Porridge

10-15 c water

2 c chopped wheat kernels (soak overnight)

2 c pearl barley

handful of whole grain wheat flour

handful of crushed nut kernels

3-4 T honey (or more if you have a sweet tooth)

healthy portion of apple bits, pears, berries, etc

Put everything but honey & fruit in pot & cook for 1/2 hr (add more water if needed) add honey & fruit, warm through, Serve warm with some cream on top
