Almond Milk

3/4 c almonds (blanced and skinned)

4 c warm water

blend 1/2 at a time in blender until a smooth white liquid forms, strain (reserve almond pieces to add to breads or soups) the milk itself is used to flavor a number of dishes

Bastard (Sweet Wine Drink)

Steep 3 lbs ground almonds, 1 lb fir pine seeds & 1 lb currents or raisins + ginger, cinnamon & cardamom in 2 gallons wine & 2 qrts clarified honey

Herbal Infusion

While it's true that tea did not reach Europe until the Renaissance, herbal drinks were popular for centuries before, Any of the following herbs can be steeped and sweetened with honey and/or fruit mint, chamomile, stinging nettles, hawthorn, raspberries, strawberries, elder, linden, yarrow, apple (pieces or blossoms)

Sweet Water

(great drink to cover the not so sweet flavor of camp water)

Dissolve 4 c sugar in 2 c water, when it boils add 2 c wine, simmer 1/2 hr, add handful of fresh mint, let cool. Use the syrup diluted in water

(a similar drink can be made with honey and ginger)

Viking Apple Drink

apple bits

apple leaves

honey

simmer on fire & serve hot (for variety, add pears, berries, etc depending on the season)
