Maria's Meatloaf

Ingredients:  
                                                             
1 1/2 lbs lean ground beef
1C milk
1/4 tsp sage
1/2 tsp salt
1 tsp dry mustard
1 tsp pepper
3 slices bread,made into tiny breadcrumbs!!
1 egg
1 small onion,diced
1 Tbsp Worcestershire sauce
1 garlic clove

Method:
Break egg into large bowl.Add onions and spices;mix well.Add milk and W sauce;stir.
Add breadcrumbs.Crumble beef into mixture,mix well.Spread in loaf pan.Bake in 350* oven for 1 1/4 hours.
Note:
Remove from oven and drain grease after a half hour.Repeat after another half hour.At the one hour mark,drain and then top with 1/2 C of ketchup or BBQ sauce,return to oven for last 15 minutes.
Alternate topping:
3/4C brown sugar
1 1/2 tsp garlic powder
1 tsp prepared mustard
3 Tbsp ketchup
Mix together in small bowl,spread on top of meatloaf near the end of the cooking time.
                                     Fettucine with Bolognese Sauce

Ingredients:
1 Tbsp olive oil                                                   1 lg can diced tomatoes*
1 lg yellow onion,diced                                         1/4 tsp red pepper
3 stalks celery,diced                                           2Tbsps chopped oregano
                                                                                      or 1Tbsp dried
1 carrot diced                                                       1/3C parsley,chopped
4 cloves garlic minced                                            2 1/2tsps kosher salt
1/4 pound pancetta,chopped*                                 1/4 tsp black pepper
1 1/2 pounds lean ground beef                                1/8 tsp nutmeg
1C dry white wine                                                   1/4C grated parmesan
1C milk
1 6oz can tomato past

Method:
In a dutch oven,heat oil over medium heat.Add onion,saute 2min.Add celery,carrot and garlic and cook for 5 min more.Add pancetta and cook for 5 min,then add beef and cook till brown.Add the wineand remaining ingredients.Simmer for 45min-2 hours.Stir fairly often.Serve with fettucine or spaghetti and sprinkle with parmesan.

*
Notes:
-i added a can of crushed tomatoes too for more sauce
-i don't know what pancetta is so i didn't use it
-to save time,i cooked my beef in a large frying pan while cooking the veggies in another,then transferred it all to a large pot when i was ready to add the tomatoes,etc.
-if you work at bionic woman speed like i did,you can have it thrown together in 30 minutes and ready to simmer
