When I first came to Japan I absolutely refused to try the food. But after my first 2 weeks here I had heard so many wonderful things about it that I decided to try it. Well, I was surprised. Not only did I find myself enjoying it, I also found myself trying foods from other different countries. If there is one thing in this world that each of us share, it is food. And the more we taste our neighbors food, the more likely we will become friends. So go ahead, take a stab at it. I'm pretty sure you will find many surprises.

Kahlua Cake
1 Cake Mix (devil's food)
1 16oz tub sour cream
1/2 cup Kahlua
1/2 cup oil
2 eggs
16oz. choc. chips
Grease & flour Bundt Cake Pan.
Preheat oven to 350 degrees
In large mixing bowl, combine all ingredients except choc. chips. Beat at medium speed with hand mixer for 2 min. By Hand, stir in choc. chips. Pour into greased & floured Bundt Pan & bake for 45-50 minutes.

RUM BALLS
3 cups of finely crushed vanilla wafers (about 75)
2 cups powdered sugar
1 cup finely chopped nuts (pecans or walnuts)
1/4 cup cocoa
1/2 cup light rum or bourbon or brandy (chose only 1)
1/4 cup light corn syrup
granulated or powdered sugar
Mix crushed wafers, powdered sugar, nuts and cocoa. Stir in rum and corn syrup. Shape mixture into 1 inch balls. Roll in granulated or powdered sugar. Refrigerate in tightly covered container several days before serving. Makes about 5 dozen. These are very easy to make. If the mixture seems to be too moist to roll into the balls, I just add a little more of the crushed vanilla wafers. The mixture should not be too dry tho.

This is a slightly different version for Rum Balls. This recipe has been in Mr. Page's family for generations. It is equally good too.

RUM BALLS
Prepare 2 cups vanilla wafer crumbs,rolled fine
Add:1 cup finely chopped coconut,pecan or walnut meats(sometimes I combine the nuts and coconut to make a cup)
2 Tablespoons cocoa
2 Tablespoons white corn syrup
1/3 cup(approx) rum,brandy,bourbon or cointreau
Mix all ingredients well. Shape by teaspoonsful into firm balls. Roll in confectioner's sugar,cocoa or instant coffee.Store tightly covered. Makes 50. Note: I usually let them sit about 2-4 hours before I store them,to let them harden some. They are powerful,and very good.
