jars when very hot, and it keeps for weeks. We panic-produce it in
August and September when my mother's plum tree comes into fruit.
The total volume is about 2.2 litres, and it's a very good drink well-chilled
on a hot day. This recipe is dead easy, and makes a drinking compôte,
unlike some which are good for desserts.
900 g plums
150 g sugar
1500 lm water
strip lemon peel
Clean fruit, remove stones, and cut into quarters. Put into a large
pot with sugar and water, and bring to boil. Once boiling, boil only
for another minute or so, and ladle the whole thing onto the peel, in whatever
container you wish. Once cooled to room temperature, chill well.
Use quickly if not sealed hermetically.
