Yellow Split Pea and Frankfurter Soup

1 onion
1 carrot
1 clove garlic
1 stick celery
203 tbsps. vegetable oil
� tsp. ground mace
1 lb. yellow split peas
7-8 cups chicken or vegetable stock
2 bay leaves
Appox. 8 frankfurters

Peal onion, carrot and garlic and cut onions and carrot in rough chunks. Put them all, along with roughly cut chunks of the celery, into the bowl of food processor and blitz until finely chopped.
Scoop oil into heavy-based, wide saucepan and place on medium heat. When warm, add chopped veggies and cook for 5-10 mins, until soft but not brown.
Add mace and stir; add split peas and stir in with vegetables. Add sock and bay leaves, then bring to a boil. Lower heat, cover and cook for about an hour until everything is tender and sludgy. Add more stock if soup is too thick. Once soup has finished cooking, taste for seasoning and adjust with salt and pepper, if needed.
Add th frankfurters as you wish. Slice them into 1-in. chunks and throw them into the soup to warm, about 15 mins before serving, or heat them in the microwave, cut into chunks and add each to bowl as you serve the soup.
