Veggie Southern Stew

1 tbsp oil
1 medium onion, large dice
2 cloves garlic, minced
1 medium carrot, 1� diced
1 medium red pepper, 1� diced
1� cup mushrooms, quartered
2� cup can diced tomatoes with juice
� tsp salt
2 medium potatoes, peeled and 1� diced
1 pkg Veggie Ground Round Mexican, crumbled
.
Saute onions and garlic in oil until onions are transparent.
Add carrots, peppers, mushrooms, canned totamtoes, salt and potatoes, bring to simmer and cook partially covered over low heat until potatoes are tender.
Mix in Veggie Fround Round Mexican and heat it through.
Serve with crisp tortilla chips.
