Swiss Cheese Potato Pie

6 large eggs

1 cup chopped green onions

� tsp salt

� tsp pepper

3 cups diced, peeled and cooked potatoes, or frozen diced hash browns, thawed

6 oz grated Swiss cheese

4 oz bacon or ham, diced

� cup diced green bell pepper

� cup milk

Preheat oven to 350 degrees.� Generously butter a 9-inch pie dish.

Whisk eggs, onions, salt and pepper in a large bowl. Add potatoes, cheese, ham or bacon, bell pepper and milk, stirring to blend.

Pour into prepared dish.� Bake until set, about 1 hour and 20 minutes.� Cut into wedges.
