Skewered Grilled Shrimps

2 zucchini, cut into 1-in. slices

1 red peppers, cut into quarters

1 yellow pepper, cut into quarters

12 cherry tomatoes

12 large shrimp with tails on

12 large scallops

2 tbsps. extra virgin olive oil

fresh tarragon sprigs

.

Preeat bbq and lightly grease grill. In a grill basket cook prepared vegetables for 10 to 12 mins, turning over halfway through cooking time. Thread shrimp onto metal skewers. Place shrimp on the grill once vegetables have been cooking for 8 mins. Cook shrimp for 2 to 3 mins each side. Finally add the scallops and cook for 1 to 2 mins each side.
