Saturday Night Roast Pork

2 lb. boneless pork loin roast
1 cup orange segments, finely chopped
2 tbsp. sweet honey mustard
2 tbsp. brown sugar
3 cups salad greens
1 cup cherry tomatoes

Place pork in roasting pan. Add 1 cup boiling water, cover and cook in a 325*F oven for 1� hours. Uncover roast. Mix together orange segments, mustard and brown sugar. Spread over pork roast. Roast for a further 20 mins. Let stand for 15 mins before slicing.
Arrange salad greens and cherry tomatoes on plattr and place slices of roast pork alongside of greens.
