Orange Almond Biscotti

3¼ cups flour

1 Tbsp baking powder

¾ cup sugar

½ cup butter, softened

5 eggs

2 Tbsp grated orange peel

1 Tbsp vanilla extract

⅔ cup chopped almonds

Combine the flour and baking powder in a bowl and mix well.

.Beat the sugar and butter in a mixer bowl until pale yellow, scraping the bowl occasionally.  Beat in the eggs, orange peel and vanilla until mixed.  Add the flour mixture, beating until mixed; the dough will be sticky. Stir in the almonds.

Divide the dough into 3 equal portions.  Wrap each portion in plastic wrap.

Chill for 3 hours or until firm.  Shape each portion into a 12-inch log on a lightly floured surface.  Arrange the logs 3 inches apart on 2 greased cookie sheets.

Bake at 350 degrees for 30 to 35 minutes or until firm in the center and slightly cracked on top.

Cool on the cookie sheets on a wire rack for 10 minutes. Transfer the logs carefully to a cutting board.  Cut each log diagonally into 15 slices using a serrated knife. Arrange the slices cut side down on a cookie sheet.

Bake for 12 to 15 minutes or until the cookies are dry and light brown, turning once.  Remove to a wire rack to cool completely.
