Microwaved Eggs in Peppers

2 red peppers

4 eggs

salt and pepper, to taste

Slice tops of peppers and remove. Remove seeds. Place peppers upright on a microwave-safe plate. Microwave on high for 3 mins. Invert and drain on a paper towel. Place peppers on a microwave-safe plate.

Break 2 eggs in each pepper. Microwave on medium-high(70%) for 5 mins or until eggs are almost cooked. Let stand for 2 mins and serve.
