Meat & Peas Polau

2 cups basmati rice
3 tbsps. ghee or melted butter
1 tsp. cumin seeds
1 cup finely chopped onion
1 large garlic clove crushed
� tsp. fresh garlic grated
6 whole cloves
12 oz. minced lamb meat
2 cups dried green peas
4 cups hot water
salt to taste
1 tsp. garam masala

Wash rice and drain. Heat the ghee in a large saucepan with a tight fitting lid. Fry the cumin with the onion, garlic, ginger, and cloves until the onion is soft and golden brown. Add the minced lamb meat and fry over medium heat until brown. Add the peas and the hot water and cook until the peas are half cooked. Add the rice and salt to taste.
Bring to boil and cover, lower to simmer and cook for 10 mins. Add the Garam Masala, cover and cook 10 more minutes until the liquid is all absorbed and the rice is cooked through. Serve hot.
