1 1/3 cups all-purpose flour
1 Tsp. baking soda
½ Tsp. Salt
½ cup vegetable shortening
½ cup granulated sugar
½ cup packed light brown sugar
½ cup peanut butter
1 large egg
1 Tsp. vanilla extract
granulated sugar for rolling
chocolate kisses for decoration

Preheat the oven to 350*.
Combine the flour, baking soda, & salt.
In a large bowl, cream the vegetable shortening & the 2 sugars. Beat in the peanut butter. Beat in the egg & vanilla extract. Gradually blend in the dry ingredients.
Pinch off walnut-sized pieces of the dough & roll into balls. Roll the balls in granulated sugar & place 1-in apart on ungreased baking sheets.
Bake for 8-10mins, until just starting to color. Press a chocolate kiss into the center of each ball & return to the oven for 3 mins. Transfer to wire racks to cool.
